Lobata is a grill where you sit around and the chef cooks for you and serves direct from the grill to you it is usually great fresh food, mainly vegetables and fish/seafood, at a good price and a friendly casual atmosphere, good value for money but be prepared to stink!!
Osaka prides itself for the okonomiyaki, Hiroshima as well, I prefer the Hiroshima version, not sure why as it is equally fat, greasy and unhealthy!! but it is fun I like to go to Goemon, fun place, not touristic, small, lively, fun try it!
Kanazawa is becoming very accessible with the Shinkansen in 2h40 from Tokyo.
